The Cellar: Tradition and Innovation

We have restored a historic cellar built in 1900, adapting it to current sanitary and production standards without losing its original essence. We have preserved and restored the structural elements and authentic materials, thus maintaining the architectural heritage. In addition, we display the original machinery from the early 20th century as part of the living history of our project. At the same time, we have integrated cutting-edge technology into the production process. This combination allows us to produce wines with maximum respect for the grape, capturing the unique personality of our soils and native varieties. In this way, we ensure that every bottle tells a story of tradition and quality.

Aging Spaces:
A Dialogue Between History and Modernity

We have restored and adapted the old underground tanks, known as "cups" or "trulls," which were traditionally used for fermenting the must. Today, these iconic spaces have been transformed into aging rooms, where time and the environment work in harmony to perfect our wines.

For the aging process, we use a combination of French oak barrels, glass demijohns, and terracotta amphorae, each contributing unique nuances to the wine. This balance between tradition and innovation allows us to authentically express the richness of the territory and the character of our varieties.
